Vegan Super Oat Flapjacks – Foodie Friday

Now I don’t know about you, but I’m a serious snacker. Be it elevensies, twosies or just before bed-sies, I love snacks. The big problem with snacks is that they tend to be not too healthy. I consider myself to have a healthy diet, I eat at least two pieces of fruit a day, I make the majority of my meals from scratch and I’m vegetarian. However, when it comes to snacking – GIVE ME THE DOUGHNUTS, CHOCOLATE, CAKES, CRISPS, DOUGHNUTS.. I think you get the point.

Recently I’ve subscribed to the SourcedBox, which is a monthly subscription service that sends healthy, dairy-free pretty much 100% vegan snacks to your door. I’m sooooo excited, however I thought I’d best start trying to be more healthy now as it won’t arrive until March.

Now before I get into it I just want you to know I’m a fussy vegetarian, I don’t have any dairy products (i.e. milk and yoghurts) aside from cheese – I literally can’t give it up. So I’m kinda a vegan-tarian, if that’s a term.

Upon shopping in Tesco I saw this new brand called ‘Sweetpea Pantry’ and I was drawn in by the rustic packaging and the words ‘Super Oat’. I haven’t seen them in store before and liked that the make it yourself mixture was sugar-free and gluten-free.

I started looking at the ingredients and soon noticed that you can make these flapjacks using butter and honey if you so wish, or you can make them completely vegan by using coconut oil and syrup. I was sold.

These flapjacks are sooooo easy to make. I simply heated up the coconut oil and maple syrup together and then poured the mixture into the oats provided in the box.

Then all you need to do is mix it all together until you get a nice sticky consistency and press the mixture into a greased line tin (or in my case a coconut oiled silicone tray) and bake them for 15-18 minutes until golden brown.

Once baked, simply cut into squares straight out from the other and allow to cool in the fridge so they don’t crumble apart.

They are so delicious, I literally can’t believe they aren’t really that naughty! I’m definitely going to be looking into the other home bake options in the range as I’m super impressed and yes, although I could probably conjure up this mixture of oats, quinoa, flaxseed, coconut, sultanas, dates and gluten-free flour myself (yes that’s all that’s involved in this mixture), it’s just so convenient to pick up a packet whilst out shopping.
