Nothing screams Christmas like a mince pie.
On my venture to use as little animal related products as possible, I decided to give my hand a go at making vegan pastry for my mince pies this year.
I did a lot of research into recipes online and many of them included Vodka with the recipe – something which I decided not to go for, purely because I wouldn’t want to waste such a thing. So here is my recipe for the perfect mince pie pastry – all you need is the mincemeat.
I N G R E D I E N T S (makes 16)
250g plain flour
100g coconut oil – extra cold
½ tsp sea salt
80g caster sugar
7 – 10 tbsp of ice cold water
280g mincemeat – of your choice
Some plant based milk for glazing your pies
Icing sugar for dusting
M E T H O D
- Take the mould for your mince pies and put them in the fridge to ensure they’re cold.
- Add the flour, salt, coconut oil and sugar to a food processor and blend together until it resembles breadcrumbs.
- Next, start adding the water one tablespoon at a time until the mixture starts to ball up as the blade goes round. At this point, stop the food processor and take the mixture out.
- To test that the mixture is ready to roll, see if you can squeeze it together without it crumbling. It should be a true dough mixture. If not – pop back in the processor and add another tablespoon of water until you reach a true dough.
- Bring the dough together onto a floured surface and roll it out until it’s about 2-3mm thick.
- Cut out your pie shapes using an item/cutter that will fit your mould. It may be that using a jar lid may work best.
- Once you’ve placed these into the moulds, add mincemeat to come level with the top of the pie.
- Then add the lids, or if you wish shapes of your choice (such as stars/christmas trees) and brush with the milk to stick together and also on the top tpo give that gorgeous golden bake.
- Pop your trays with the mince pies back into the fridge whilst heating your oven to 220 degrees.
- Once the temperature is reached, put your mince pies in the oven for around 20-22 minutes.
- Take the pies out of the oven and immediately take them out of the moulds and place them on the cooling rack.
- Enjoy warm or cool – either way, I can guarantee they’ll be enjoyed.
