Peanut Peach Pudding

There’s nothing I love more after my tea (or dinner if you’re proper) than afters. I’m sure I’m not alone in this! As much as I’d like to indulge in some chocolate or cake every night, I know this isn’t the best thing to do. So instead I’m turning to healthier recipes and today, I’m sharing this super tasty peanut peach pudding one with you.

What do I need?

∙ 4 tablespoons of coconut yogurt (I use dairy-free)
∙ 1 peach, cut into small cubes
∙ 1 tablespoon of peanut butter
∙ A sprinkling of cinnamon
∙ 1 tablespoon of chia seeds

How do I make it?

Mix together the yogurt and peanut butter, before adding the peach cubes. After this, simply sprinkle the cinammon and chia seeds on.

Is it good for me?

Hell to the yeah and here’s why;

The peach will give you 24% of your recommended daily allowance of Vitamin A, 9% calcium and 10% of your needed vitamin C.

The yogurt is less than 100 calories and provides you with 3.5g protein. When added with the peanut butter, this adds another 4.5g of protein.

The chia seeds (one of my favourite food ‘extras’) provide an amazing 88.3% of your recommended calcium. They also give you a whopping 4.8g fibre, which is great for keeping you regular. Honestly, I swear by these seeds (maybe more on that in another post?).

Protein: 11.5g
Calories: 320
