Vegan Fruity Scones

I don’t know about you but I bloody love a good scone. It’s the perfect afternoon tea vibe and they’re surprisingly easy to make! Last week
I got burnt in the sun, so I came back inside to do some baking. Watch the video below for all the steps to take and let me know if you make your own scones.

Ingredients.

350g plain flour
1/2 tsp baking soda
2tbsp baking powder
3 tbsp caster sugar
Pinch of salt
150ml soya milk and extra for glazing
95g vegan spread
Raisins

Method.

❥ Put baking powder, baking soda, sugar, salt and flour into a big bowl and mix together.
❥ Add in the vegan spread and use your hands to make a breadcrumb texture.
❥ Next add in the milk a little bit of a time and mix until you get a dough.
❥ Add the raisins, as many as you want.
❥ Roll out the mixture to 2cm thick and put in the fridge for 30 minutes.
❥ Take out the fridge and use a 7cm circle cutter to cut them out and put them upside down on a baking tray 2cm apart.
❥ Add glaze of soya milk to the top of the scones, making sure it doesn’t drip down and then put in the freezer for 15 minutes.
❥ During this time pre-heat the oven to 200 degrees.
❥ Take the scones out and pop them straight into the oven for between 18 – 20 minutes or until golden brown.
❥ Let cool for around 10 minutes before tucking in!
